About Grindstone Health Collective.

GHC was founded in March 2025 by me, Philip Kassebaum, with the mission of offering a nuanced and deeply personalized approach to nutrition, training, and life coaching. I’m 28 years old and a lifelong resident of Charleston. I hold a master’s degree in the history of American nutrition and public health, and I’m a certified personal trainer and nutritional consultant. My own health and fitness journey—from losing 100 pounds to overcoming IBS and other chronic health challenges—has fueled my passion to help others navigate their own paths. Through GHC, I aim to guide individuals toward reaching new heights—physically, mentally, and spiritually.

Education

2021-2024

MA in the history of American Nutrition and Public Health.
The College of Charleston

My expertise lies in nutritional history, with much of my graduate research focused on America's evolving relationship with dietary fat. I concentrated on the origins of the industrial food system, the introduction of calorie-based quantification, and the development of the Diet-Heart Hypothesis, which promoted low-fat diets and catalyzed a shift from traditional saturated animal fats—such as lard and butter—to industrial seed and vegetable oils like Crisco and canola oil. Additionally, my work explored the historical roots of chronic diseases such as cardiovascular disease and obesity from the 1950s onward, and how these conditions have been shaped and framed as policy constructs influencing American public health decisions.

My undergraduate studies focused on natural resources management, with an emphasis on fostering a symbiotic relationship with the natural environment—particularly in relation to water management in the Western United States.

2019-present

Certified Personal Trainer and Certified Nutrition Consultant 
with ISSA, the International Sports Science Academy.

My personal training style specializes in resistance training, with a focus on hypertrophy and strength development. I emphasize proper form and injury prevention as foundational elements of my methodology. In my nutrition consulting, I take a comprehensive, individualized approach—evaluating the full metabolic spectrum of each client’s unique physiology. Central to my practice is optimizing gut health, which I view as the cornerstone of overall well-being. By supporting the gut, I help clients improve not only digestion but also sleep quality, physical performance, immune function, and long-term health.
